Valentine’s Puppy Chow

During the holidays, my grandma used to always make puppy chow and it was a HUGE hit. This year, I decided to put my own spin on it and make one for Valentine’s Day! It you like strawberry, you need to try this out!

Ingredients:
– 6 cups chex cereal
– 3/4 C strawberry cake mix (unprepared)
– 3/4 C red candy melts (found @ Michael’s)
– 3/4 C white candy melts (found @ Michael’s)
– 3/4 C powdered sugar
– 1 C Valentine’s M&Ms
– 2 TBSP Valentine’s sprinkles

Directions:
1. Separate your chex into two bowls, 3 cups in each bowl.
2. In a separate bowl, combine powdered sugar and cake mix.
3. Microwave red candy melts in a microwave safe bowl in 1 minute increments and stir until smooth.
4. Pour the melted red candy over one of the bowls of chex and gently mix until coated.
5. Add the coated cereal to a gallon ziploc and add in 3/4C of the cake and sugar mixture. Shake until covered and pour onto parchment paper.
6. Microwave white candy melts in a microwave safe bowl in 1 minute increments and stir until smooth.
7. Repeat steps 4 and 5 for the melted white candies.
8. Add red chex, white chex, M&Ms and sprinkles to a large bowl and mix together.
9. This can be stored for up to a week in an airtight container or shared with friends and family immediately! Enjoy!

Mini Crustless Pumpkin Pies

I made these for the first time for Thanksgiving and they were a huge hit! They were made with a muffin tin and super easy. If you’re like my husband and like pumpkin pie but not the crust, give these a try next time you sign up for dessert!

INGREDIENTS:
– 15 oz pure pumpkin puree
– 3/4 cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract
– 3/4 cup evaporated milk
– 2/3 cup all purpose flour
– 2 tsp pumpkin pie spice mix
– 1/4 tsp kosher salt
– 1/4 tsp baking soda
– 1/4 tsp baking powder
– whipped cream for topping

DIRECTIONS:
Preheat oven to 350 and line muffin tin with cupcake liners (I used a silicone pan and didn’t need to do this).
In a large bowl combine pumpkin, sugar, eggs, vanilla extract, and evaporated milk and whisk until smooth.
In a separate bowl combine flour, pumpkin pie spice, salt, baking soda and baking powder and whisk until combined.
Pour dry mixture unto pumpkin mixture and mix until combined.
Use a cookie scoop and scoop batter into prepared muffin tin, filling at least 1/3 full as they will deflate a little while cooking.
Bake for 20 minutes. Let cool in pan for about 30 minutes. Transfer to a tray and refrigerate for 30 minutes.
When ready to serve, top with whipped cream and sprinkle with pumpkin pie spice.
